16 ounce chickpeas (garbanzo beans) canned, drained, rinsed, drained again.
½ cup cucumbers, chopped
2 each avocados, chopped
¼ cup red onion, chopped
½ cup sweet yellow bell peppers, chopped
1 small tomatoes, chopped
⅓ cup feta cheese, crumbled
Lemon juice, to taste
Salt and black pepper, to taste
Get a medium-sized bowl and Toss the 16 ounce chickpeas, ½ cup of chipped cucumbers, 2 chopped avocados, ¼ cup of chopped red onion, ½ cup of chopped sweet yellow bell peppers, 1 small chopped tomatoes, ⅓ cup of crumbled feta cheese. Add Lemon juice, salt and black pepper, all to taste.
