13 ounces sole fillets
31/4 ounces each fillet
2 teaspoons extra-virgin olive oil
2 teaspoons lemon juice
2 tablespoons all-purpose flour
2 teaspoons parsley leaves fresh, chopped
⅛ teaspoon black pepper
⅛ teaspoon paprika
salt to taste
Rinse fillets thoroughly in cold water; pat dry with rag towels, spice each side lightly with salt and lay aside.
Combine 2 teaspoons of extra-virgin olive oil and lemon juice in a small-sized bowl. Mix flour, chopped parsley and black pepper in a small container. Put fillets in butter/lemon juice mixture and scour in flour mixture.
Transfer fillets to a nonstick baking sheet, and sprinkle any remaining butter/lemon mixture over fish. Sprinkle fillets with paprika.
Bake at 375℉ for about 20 minutes or until fish is freshly brown.
