Spice of 1 lemon
¼ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons extra-virgin olive oil
1/2 pound shrimp, peeled and deveined
½ cup feta cheese
1 cup chopped arugula
1 cup of a grain like; Quinoa, barley or whole-wheat pasta shells
1 ripe avocado, peeled, stone removed and sliced into cubes
1 tablespoon lemon juice
½ tablespoon fresh minced dill
Heat up oven to about 400°F and line a baking sheet with parchment paper.
Cook whole grain in a large bowl.
Add lemon zest, salt, pepper and 1 tablespoon olive oil in a medium bowl add your ½ pound of shrimp and toss until coated.
Place shrimp on baking sheet and bake for about 10 minutes or until shrimp turns more milky surface on the inside.
Cook shrimp and while that is on, combine feta cheese with arugula and the cooked grain in a large bowl.
Add avocado, lemon juice, dill and cooked shrimp to the arugula mixture. Mix gently until a perfect mixture.
Trickle with remaining 1 tablespoon olive oil.
